2-minute choc chip cookies
By Haley’s Joys – Serves: Makes 2 cookies
Ingredients
- ¼ cup (40 g) plain flour
- 1 tbsp brown sugar
- 1 tbsp caster sugar
- 1 egg yolk
- pinch of salt
- 1 tbsp butter, softened
- ¼ tsp vanilla
- 2 tbsp mini chocolate chips
Instructions
1. Place all the ingredients, excluding the mini chocolate chips, into a small bowl and mash together using a fork until they are thoroughly combined.
2. Add the choc chips to the mixture and then lightly mix together until the choc chips are evenly distributed throughout the dough.
3. Lightly coat two ramekins with butter. Roll the dough into two balls and gently press each ball into the base of a ramekin.
4. Microwave each cookie individually on high for 90 seconds and then check the cookie. Depending on whether you like your cookies crunchy or chewy, you may need to microwave for a further 15-30 seconds. The longer you microwave the cookie, the crunchier it will become.
