Spicy Mexican beef skillet
Serves 4
You’ll need:
- 300g McCain Sweet Corn;
- 1 packet McCain Savoury Rice;
- 500g beef mince; oil;
- 3 teaspoons garlic and ginger, crushed;
- 1 onion, chopped;
- 1 large red pepper, diced;
- 1 can red beans, rinsed and drained;
- 1 can diced tomatoes;
- 1 cup chicken stock;
- 2-3 teaspoons chilli flakes;
- 1 tablespoon cumin powder; juice of a lemon; chopped dhania; salt and pepper.
- Cook McCain Savoury Rice according to package instructions and set aside.
- In a large pan, heat the oil and onion and add the beef mince.
- Cook until browned, add the garlic and ginger.
- Add the peppers with the spices and tomatoes.
- Allow cooking for 10 minutes before adding the red beans and sweet corn.
- Mix the beef mince mixture with the rice. Squeeze the lemon juice and garnish it with dhania.
