GARDEN ROUTE NEWS - To Marelize Oosthuizen, chef of Black Swan Restaurant in Oudtshoorn, preparing food is an art.
She has been in restaurant kitchens for more than ten years, of which the last five have been at Black Swan in Baron van Reede Street.
"I spent four years at Surval Boutique Olive Estate in their restaurant and a year at Madi-Madi Game Lodge before I joined Black Swan," she says.
Although Marelize prepares a wide variety of dishes she says her favourite dish is lamb shank. She was willing to share the recipe, but cautioned that it is not a dish for impatient chefs as it can take up to four hours to do the perfect lamb shank.
